Oh the humanity of it all! It is that time of year again when the tree blood of maples is harvested and scarifies to the waffle gods are made.
Maples were the best local source of sugar before honeybees. A guy who gave me a ride once had seen me going into to tap trees and said maple syrup was the only sweetener in his house when he was growing up. He looked only a bit older than me.
